stewed apple & cinnamon oats

Mmmm I LOVE this for breakfast, it is filling, delicious and like a warm bowl of winter! Making 3-4 portions of apple ahead means you can add it to your porridge oats or greek yoghurt! So good!


Ingredients:

50g porridge oats

30g salted caramel protein powder

5g flax seeds

5g chia seeds

1 apple, diced

10g raisins

1 tsp cinnamon

1 tsp honey


Method:

  • Dice apple and place in a pot with some boiling water, put the lid on and stew until soft. If water starts to run low, add more so it doesn’t stick to the pan. A few minutes before apple is fully cooked and soft, add in the raisins and 1 tsp cinnamon. Stir through.

  • Meanwhile, place your oats in a pot with water and begin to boil - this takes minutes. Once almost cooked, add the protein powder and stir thoroughly, you may need to add more water.

  • Place the protein porridge in a bowl, top with the stewed apple mixture, chia seeds, flax seeds and drizzle of honey.

  • Note: I usually make multiple batches of stewed apple to have over 2 or 3 dishes.
