Fajita Chicken Mac & cheese

My 15 year old asked me to make a fajita pasta so I kind of winged this and it turned out much better than I thought! It honestly tasted like a treat and I am shocked I made it with under 600 calories!!! Perfect for a fakeaway ladies!!
Ingredients:
2 chicken breasts (roughly 180g each)
100g fusilli (uncooked)
300ml skimmed milk (warmed)
300ml hot chicken stock
50g grated reduced fat cheese
1/2 white onion, diced
Mushrooms, diced (or peppers - choice is yours)
2 garlic cloves, sliced
2 tbsp fajita seasoning
1 tbsp olive oil
Method:
Heat the oil in a frying pan over a medium heat.
Add the diced chicken breast and season with 1 tbsp of fajita seasoning. Fry for 7-8 minutes until cooked through and remove from pan.
Add the diced onion and either mushrooms or pepper, depending on what you want and fry until soft. Add the garlic and stir for another minute or two.
Add the dried pasta, the chicken stock and milk and stir thoroughly. Leave for about 15 minutes until the pasta has fully cooked and theres no water left. Turn down the heat and add in the grated cheese, 1tbsp of fajita seasoning and once the cheese has melted, add the chicken back in.
Stir together then serve. Makes 2 portions.
