Feta & Pomegranate Salad

I made this with whatever was in the fridge to make a nice salad and this was just delicious! Refreshing and delicious. Perfect for a summer day salad with grilled prawns / salmon / chicken.


Ingredients:

75g lighter feta cheese, crumbled

Cherry tomatoes, diced

Cucumber, diced

Pomegranate seeds

Salad leaves

1 tbsp lemon juice

1 tbsp honey

1/2 tbsp olive oil

salt & pepper

(if I had red onion in the house, I would add this too!)


Method:

  • Place all of the ingredients into a large bowl and mix thoroughly.

  • I served mine with king prawn skewers, would also be really lovely with salmon or chicken. Would also be great with wholegrains mixed through!
