spaghetti bolognese

Oh this is my absolute fave!! Spag bol is always a family favourite in our house hold! This recipe takes about 40 minutes to make but you can simmer it over a low heat for a few hours to give it even more flavour!!
Ingredients:
500g 5% fat mince
200g wholewheat spaghetti
500g passata
1/2 white onion
Handful cherry tomatoes
300g mushrooms
Handful spinach
2 tbsp tomato puree
2 garlic cloves
oregano
1 tbsp olive oil
Parmeson
Method:
Place olive oil in a pot over a medium heat. Slice your white onion and garlic cloves and stir through until fragrant. Add the mince and stir through until it begins to brown.
Slice the tomatoes and mushrooms and add into the mince with the spinach.
Add the Passata and tomato puree, stirring thoroughly. season well with dried organic.
Allow bolognese to simmer over a low medium heat for 20-30 minutes, stirring regularly to stop from sticking to the pot.
Meanwhile, boil spaghetti for required time.
Grate fresh Parmesan over the top and season with black pepper.
