Mac & cheese

A big family favourite in my house! This recipe is full of flavour and by serving as a side, rather than a main dish you can save yourself a lot of calories or if you don't care then enjoy a big portion of mac & cheese!!


Ingredients:

50g butter / olive oil spread

50g plain flour

400ml skimmed milk

100g mature cheddar & garlic cheese

180g light cheddar cheese

375g macaroni pasta


Method:

  • Preheat the oven to 180 degrees.

  • In a pot,  melt the butter over a medium heat and add the flour, mixing thoroughly until a buttery paste has appeared. Add the milk 100ml at a time, mixing thoroughly until its a thick white sauce.

  • Boil the pasta

  • Grate both the cheeses. Keep about 1/2 of the light cheddar to once side and add the rest into the white sauce, along with the garlic cheddar cheese. Stir with a whisk until the cheese has fully melted and is starting to bubble.

  • Mix the macaroni into the cheese sauce, seasoning with salt and pepper and pour into an oven proof dish, topping with the remaining cheese. Pop in the oven for 10 minites to allow the cheese to melt. Serve immediately.


  • makes 6 small(ish) portions or 4-5 bigger portions. Calories are based on 6 portions.

  • I served mine with seasoned chicken breast and tenderstem broccoli, bringing the calories upto 650 and 62g protein!!
