Perfect fake-away to enjoy, knowing you're eating a nutritiously balanced meal - a family favourite.
Ingredients:
500g diced chicken breast
4 tbsp honey
2 tbsp ketchup
3 tbsp sesame oil
6 tbsp light soy sauce
1 tbsp garlic puree
1 tsp chilli flakes
1 egg
30g flour (potentially more)
2 bell peppers, sliced
150g green beans, sliced
sprinkle sesame seeds
spring onion, sliced
Method:
• Whisk the egg in a bowl and add the diced chicken. Put the flour in a sealable bag and add chicken. Shake thoroughly to coat then pop aside.
• In a large pan add the honey, ketchup, 2 tbsp sesame oil, soy sauce, garlic purée & chilli flakes, over a medium heat. Mix thoroughly and keep stirring for 5 mins or so while sauce thickens a little then pour into a bowl and pop aside.
• Add the rest of the sesame oil to the pan and add the chicken. Once chicken is half cooked, add the peppers and green beans until everything is fully cooked. Add the sauce back in and stir through until everything is coated.
• Serve with rice or noodles, and top with spring onion and sesame seeds.
