Herby salmon w/ roast potatoes, creamy garlic mushrooms & broccoli

Ladies, this is absolutely delicious, no one else in my house like salmon so I am the lucky one who gets to have it twice in the week!


Ingredients:

2 salmon fillets

200g baby potatoes

300g mushrooms

4 garlic cloves

3 tbsp light cream cheese

150g tenderstem broccoli

mixed herbs

1 tbsp olive oil


Method:

  • Half or quarter your potatoes and boil for 8-10 minutes until partly soft. Once this is done, drizzle with olive oil & season with salt & pepper. Put in the air fryer on roast for 10-15 mins.

  • Cover salmon with mixed herbs and put in the other side of the air fryer for 12-15 minutes at 180 degrees, until fully cooked.

  • Meanwhile,  slice mushrooms  and garlic and put in a non stick frying pan with a little oil over a low heat until mushrooms begin to soften. Add cream cheese & stir until cooked.

  • Steam the broccoli in the microwave for 4 minutes.

  • Divide into two plates and enjoy!!
