Harissa Salmon with mango salsa

This recipe is an absolute favourite for me, it's sweet and spicy and delightfully delicious!


Ingredients:

2 salmon fillets

2 tsp rose harissa paste

1 bag microwave rice

1/2 mango

1/3 cucumber

Handful cherry tomatoes

1/4 red onion

Large handful fresh coriander

1 lemon or lime


Method:

  • Put a tsp of rose harissa paste on each of the salmon fillets and wrap in tin foil. Put in the air fryer for 14 minutes, until fully cooked.

  • Meanwhile, chop the mango, red onion, cucumber and tomatoes into small cubes and place in a bowl. Chop the coriander leaves and add them in too. Slice the lime/lemon in half and squeeze the juice of one half into the bowl. Mix well.

  • Put your rice in the microwave for 2 minutes.

  • Serve a salmon fillet with half of the rice and as much mango salsa as you wish. You can add a slice of lemon/lime too.

  • Makes for 2 portions.
