Harissa Salmon with mango salsa

This recipe is an absolute favourite for me, it's sweet and spicy and delightfully delicious!
Ingredients:
2 salmon fillets
2 tsp rose harissa paste
1 bag microwave rice
1/2 mango
1/3 cucumber
Handful cherry tomatoes
1/4 red onion
Large handful fresh coriander
1 lemon or lime
Method:
Put a tsp of rose harissa paste on each of the salmon fillets and wrap in tin foil. Put in the air fryer for 14 minutes, until fully cooked.
Meanwhile, chop the mango, red onion, cucumber and tomatoes into small cubes and place in a bowl. Chop the coriander leaves and add them in too. Slice the lime/lemon in half and squeeze the juice of one half into the bowl. Mix well.
Put your rice in the microwave for 2 minutes.
Serve a salmon fillet with half of the rice and as much mango salsa as you wish. You can add a slice of lemon/lime too.
