Creamy garlic chicken pasta

My favourite! If there's mushrooms, garlic and cheese then I'm there! Plus it takes 30 minutes to make which is a bonus!


Ingredients:

300g chicken breast, diced

100g penne pasta (uncooked)

4 tbsp garlic & herb cream cheese

300g mushrooms, sliced

Spinach, 2 large handfuls

4 garlic cloves, sliced

1 tbsp extra virgin olive oil

4 tbsp parmesan & a little to sprinkle on top


Method:

  • Heat oil in a frying pan over a medium heat and add the diced chicken.

  • In a pot, add the penne pasta and boil until fully cooked - al dente.

  • Meanwhile, once the chicken is almost cooked, add the mushrooms and garlic. Mixing thoroughly before adding in the cream cheese and continue to mix through!

  • Once fully cooked, add the spinach and a tbsp of the pasta water (if needed) into the chicken sauce and add the pasta, mixing together.

  • Add in the parmesan and mix through.

  • Serve with a season of black pepper and grate some fresh parmesan over the top.

  • Makes 2 portions.
