Chicken fried rice

A quick and delicious fake-away that will wow the family!


Ingredients:

500g minced chicken

2 bags microwave rice

1 tbsp sesame oil

6 tbsp light soy sauce

1 tbsp garlic puree

1 tsp lazy chilli

2 egg

1 tsp Chinese 5 spice

1 bell pepper, diced

1 courgette, diced

1 white onion, diced

sprinkle sesame seeds


Method:

  • In a large frying pan, on a medium/high heat, add the sesame oil and minced chicken. Break up the mince and fry until half cooked.

  • Add the garlic, chilli, pepper, courgette and onion, Mixing through.

  • Meanwhile, put your rice packets in the microwave and cook for set time. I used golden vegetables rice for the extra veggies. Add the rice and mix through.

  • In your pan, push everything to one side and add your eggs. Whisk them in the pan so they start the scramble then mix through with chicken rice,

  • Serve with a sprinkle of sesame seeds.
